To perform kitchen operational duties across various assigned sections under the direction of the Executive Chef, Chef de Cuisine, Sous Chef, or Chef de Partie. The role supports food production, food quality, hygiene standards, operational efficiency, and smooth day-to-day kitchen operations.

Operational Duties

  • Set up mise-en-place stations according to operational and performance standards.
  • Prepare food items according to approved recipes and production requirements.
  • Minimise wastage of food products and ingredients.
  • Collect food requisitions and supplies as directed.
  • Clear workstations after service periods and ensure proper food storage.
  • Assist in maintaining employee morale and productivity.
  • Support operations in any kitchen section when assigned.
  • Maintain familiarity with all kitchen sections to maximise operational flexibility.
  • Ensure kitchen equipment is properly maintained and operational.
  • Monitor storage areas and maintain high hygiene standards.
  • Coordinate repair and maintenance requests when necessary.
  • Work shifts or split shifts according to operational requirements.

General Duties

  • Maintain effective working relationships with colleagues and other departments.
  • Adhere to hotel policies relating to fire safety, food hygiene, sanitation, and workplace safety.
  • Maintain high standards of personal appearance and hygiene.
  • Comply with the hotel employee handbook and operating procedures.
  • Adapt to operational changes and business requirements.
  • Report for duty punctually and wear the prescribed uniform and name badge.
  • Any other duties or projects as assigned by the superior(s).

  • Minimum 3 years of culinary experience within a hotel environment.
  • Completion of secondary education and possession of a certificate in Western Culinary Arts or a related discipline.
  • Holder of Hygiene Supervisor or Hygiene Manager certification.
  • Knowledge of cooking methods, ingredients, equipment, and food preparation procedures.
  • Basic understanding of HACCP and food safety requirements.
