Job Description
The Halal Executive is responsible for establishing, monitoring, and maintaining the highest standards of Halal compliance, assurance, documentation, and food hygiene across all Food & Beverage outlets, kitchens, banqueting, receiving, and storage facilities at Mercure Miri City Centre. This role ensures full compliance with Accor standards, Malaysian Halal requirements, the Halal Assurance System (HAS), HACCP, and applicable regulations set by JAKIM, JAIS, and relevant authorities. The role also oversees the Halal certification application and renewal process, ensuring all required documentation, supplier verification, operational controls, and audit requirements are properly maintained.
Key Responsibilities
Halal Certification & Compliance
- Manage Halal certification application, renewal and maintenance.
- Prepare and submit required documents through MYeHALAL.
- Liaise with JAKIM/JAIS and relevant authorities on certification matters.
- Maintain the Halal Assurance System (HAS) and ensure compliance with applicable requirements.
- Monitor Halal status of ingredients, products, equipment and processes.
Halal Documentation
- Maintain updated Halal certificates, supplier records, ingredient lists and supporting documents.
- Verify and monitor Halal certificates and expiry dates.
- Ensure all Halal records are complete, accurate and audit-ready.
- Maintain proper documentation for changes to suppliers, ingredients, products and processes.
Hygiene & Food Safety
- Conduct regular hygiene and food safety inspections across kitchens, receiving, storage and F&B areas.
- Monitor food handling, storage, temperature control, sanitation and personal hygiene.
- Support implementation and monitoring of HACCP and food safety procedures.
- Identify non-conformities and coordinate corrective actions.
Audit & Inspection
- Prepare the hotel for Halal, HACCP, internal, corporate and regulatory audits.
- Coordinate audit documentation and provide supporting evidence.
- Monitor audit findings and ensure corrective actions are completed within the required timeline.
- Maintain an audit and corrective action tracker.
Supplier & Raw Material Verification
- Verify Halal certification and documentation for suppliers and raw materials.
- Maintain an approved Halal supplier and ingredient list.
- Work closely with Purchasing and Receiving to ensure only approved materials are accepted and used.
- Monitor supplier certification validity and follow up on expired documents.
Training & Awareness
- Conduct or coordinate Halal, hygiene and food safety training for employees.
- Promote awareness of Halal and food safety requirements across relevant departments.
- Maintain training records and supporting documentation.
Reporting & Continuous Improvement
- Prepare regular Halal, hygiene and food safety compliance reports.
- Highlight risks, non-conformities and areas requiring management attention.
- Recommend improvements to procedures, documentation and operational controls.
- Perform other relevant duties assigned by Management.
Qualifications
- Diploma or Degree in Halal Management, Islamic Studies, Food Science, Food Technology, Food Safety, Hospitality Management, or a related field.
- Certified Halal Executive / Halal Professional recognised by the relevant authority is preferred.
- HACCP certification and/or Food Safety certification is an advantage.
- Experienced in Halal compliance, food safety, hygiene, quality assurance, F&B, or hotel operations.
- Hands-on experience in MYeHALAL application and renewal, Halal documentation, supplier/ingredient verification, and audit preparation is highly preferred.
- Good knowledge of Malaysian Halal requirements, Halal Assurance System (HAS), HACCP, food hygiene and sanitation standards.
- Good command of English and Bahasa Malaysia, with strong documentation and reporting skills.
- Proficient in Microsoft Office and able to manage compliance records systematically.
- Strong attention to detail, communication, coordination and problem-solving skills.
