Originally built in 1888, Hotel Woolstore 1888 is the fourth oldest surviving wool store in Sydney. Today, this boutique luxury hotel forms part of the Accor portfolio and features 90 beautifully designed guestrooms, our award-winning restaurant and bar, Percy, and versatile spaces for meetings and events.

We’re looking for a passionate Part Time Chef de Partie to join our culinary team at Percy. This is an opportunity to work alongside an experienced kitchen team, showcase your skills and contribute to a creative dining experience in one of Sydney’s most unique hotels.

Job Description

As Chef de Partie, you’ll take ownership of your section while working closely with the wider kitchen team to deliver consistently high-quality dishes throughout service.

What you’ll be doing

  • Preparing and presenting dishes to menu specifications
  • Managing your section efficiently during busy service periods
  • Maintaining high food quality, consistency and presentation
  • Following food safety, hygiene and HACCP standards
  • Completing preparation lists and supporting stock control
  • Minimising food waste and maintaining an organised kitchen
  • Supporting and sharing knowledge with junior team members
  • Contributing to a positive and collaborative kitchen culture

Qualifications

We’re looking for someone who:

  • Has previous experience as a Chef de Partie or is an experienced Demi Chef de Partie ready to step up
  • Holds a Certificate III in Commercial Cookery or equivalent
  • Has experience in a hotel, restaurant or high-volume kitchen environment
  • Has a strong understanding of food safety and workplace health and safety
  • Works well under pressure while maintaining quality and attention to detail
  • Has a genuine passion for food and the hospitality industry
  • Has strong knowledge of food preparation techniques and seasonal ingredients
  • Is flexible to work weekends and public holidays
